Abstract: Twenty one representative strains of lactic acid bacteria isolated from bryndza cheese were selected and submitted for comparative genomics. The aim was to genetically characterise the lactic acid bacteria strains in order to use them in mixed starter cultures for bryndza cheese manufacture.
